Taking advantage of her participation in the Salón Gourmets, we spoke with Ariadna Prats, Export Manager at Pastisart, about the strategies driving the company’s international growth. A look into the challenges and opportunities of the global market, with a special focus on consolidating new markets and diversifying products.

What are Pastisart’s main goals for participating in Salón Gourmets?

Our main goal is to showcase new products and focus on potential international clients.

What products and innovations are you presenting at this edition?

Among other launches, we are introducing a range of high-protein products, including options made with plant-based protein. We’re also expanding our savory product line, with items we believe will be very successful, such as the brioche hot dog with ketchup and mustard.

 

Which countries do you consider strategic for the brand’s growth?

Honestly, we see many opportunities both within the European Union and in non-EU countries. We believe there is great potential in countries like Mexico, and we are convinced that the United States could also become a key market for Pastisart.

Of course, we’ll have to see how the tariff policies of the current U.S. administration evolve. That’s a factor that could have an impact, but even so, we’re confident that this market offers great potential.

 

What are the main barriers you face when exporting?

As with most products, we face tariff barriers, which have become increasingly common. But we also encounter other types of challenges, such as certifications or specific requirements imposed by clients or countries. In short, the difficulties can be quite diverse.

What makes your products stand out from the competition?

I believe one of our main strengths is adaptability—both to the market and to the specific needs of each client. We are strongly committed to innovation and to developing products that align with market trends, such as high-protein offerings. But we also work to tailor them to the particularities of each market and the end consumers.

Meet the Muffin Man, the swimmer who made Pastisart’s muffins go viral.

Henrik Christiansen is a 28-year-old Norwegian swimmer who has competed in numerous international events, even winning medals in the freestyle world championships.

Why is Henrik Christiansen called the Muffin Man?

This past summer, Henrik became famous for his “love affair” with the chocolate muffins served during a competition. These muffins not only earned Christiansen’s highest praise but also racked up millions of likes from his followers on TikTok. Throughout the event, fans eagerly followed each of his fun videos, crowning him the Muffin Man. You can check them out on his TikTok profile.

Following these viral videos, many other athletes joined in praising the Muffin Man’s favorite treat, sharing their own experiences on social media. Even some chefs took on the challenge of recreating this now-famous muffin, adding their own recipe twists.

The true recipe behind this beloved chocolate muffin comes from Pastisart, where it is made and baked at their factory in Segovia, Spain. So, upon discovering the swimmer’s passion for their products, Pastisart decided to reciprocate this love and extend their connection with him by launching an influencer campaign.

Three months after the competition, we realized that this story couldn’t just be a summer fling. That’s why Pastisart sent Henrik a gift box designed to help him relive his passionate love story with our muffins. The box contained a small present, instructions on how to rekindle the romance, and plenty of chocolate muffins.

Grateful for the surprise, our Muffin Lover created two videos showcasing the rekindling of this love affair, filled with humor, authenticity, and charm. These two videos together garnered nearly a million views—because when a product is truly great, the consumer always responds.

At Pastisart, we exemplify this trend through our collaboration with Agrosingularity, a startup focused on upcycling food ingredients. By incorporating dietary fibers and natural flavors from Agrosingularity into our whipped dough formulations (including products like plum cakes and muffins), we not only enhance product quality but also reduce our carbon footprint.

Our commitment to open innovation extends to our membership in Indpuls, a hub founded in 2022 that brings together ten Catalan companies to foster innovation across the sector.

New Product Launches

We are thrilled to introduce several exciting new products to the market in 2024, focusing on convenience and taste without compromising nutrition. Our “on the go” and “ready to eat” offerings cater to the growing demand for quick yet wholesome food options.

In the savory pastry segment, we are launching “sneckens” — cheese-filled pastries available in pizza and barbecue flavors. For those with a sweet tooth, a new range of muffins with diverse fillings such as pistachio, dulce de leche, white chocolate, and salted caramel is set to impress. Additionally, new products inspired by angel cake, castella, and chiffon cake textures are in the pipeline.

Among our most innovative offerings is a high-protein croissant, rich in natural fibers and low in sugars, alongside a new pistachio cream-filled croissant, tapping into the latest flavor trends.

Strategic Market Positioning

Our goal is to lead the national whipped dough products market. As our CEO, Núria Betriu, states, “We are investing heavily in enhancing the quality of our whipped dough products, prioritizing ingredient quality and leveraging the latest technology to maintain product freshness and fluffiness without artificial preservatives.”

Financial Growth and Sustainability

In 2023, we produced 36,040 tons of product and achieved a revenue of €107.4 million, marking a 4% increase from the previous year. We reported an EBITDA of €6 million and net profits exceeding €2 million. This growth is attributed to our investments in digitalization, AI for quality control, sustainability through solar panel installations, and automation.

Looking ahead, we plan to install a new fermentation line at our Roda de Berá plant in Tarragona. Despite concerns over rising cocoa prices, we are optimistic about a 5% growth in 2024, supported by our strengthened R&D and export teams, with a particular focus on markets in Italy, France, and the United States.

Introducing Our New Line of “Ready to Eat” Muffins with Innovative Fillings and Toppings

At Pastisart, we are thrilled to announce the launch of our new line of “Ready to Eat” muffins, now available for the American market. These 120-gram muffins come with a variety of exciting fillings such as pistachio, dulce de leche, white chocolate, salted caramel, speculoos cookie, and a special guava muffin topped with cheese, specifically tailored for our American consumers.

This new collection of flavors aligns with our strategic positioning in the whipped dough segment, where we aim to become a national leader. Currently, we offer a wide range of muffins in 60-gram and 110-gram sizes. With this new 120-gram line, designed to resemble the American “muffin” style, we are expanding our flavor and size variety to cater to the North American market.

“We prioritize flavor above all. We want our consumers to enjoy our products, providing them with a unique gastronomic experience that surprises and delights them,” says Núria Betriu, CEO of Pastisart. “We are heavily investing in enhancing the quality of our whipped doughs, prioritizing high-quality ingredients, and applying the latest technology to maintain the fluffiness and freshness of our products without using any artificial preservatives,” Betriu explains.

With two manufacturing plants, one in Roda de Berà (Tarragona) and another in El Espinar (Segovia), we have an annual production capacity of over 55,000 tons. “We have the assets and capabilities to become leaders in the whipped dough segment,” confirms Betriu, emphasizing that “our clients increasingly prioritize product quality and the uniqueness of service.”

We are embracing the pistachio trend with a new croissant filled with a smooth and warm pistachio cream. The product comes pre-fermented, egg-washed, and decorated with colorful toasted pistachio pieces, providing a delightful texture contrast.

We’re also thrilled to introduce a new addition to our “Ready to Eat” muffins lineup: the guava muffin with cheese topping. Their use of the internationally recognized ISO 14064 standard ensured the reliability of our carbon calculations, validated by an independent accredited company (APPLUS).

The Benefits of Carbon Footprint Calculation

The insights gained from this study have been invaluable. Not only have we identified the major sources of emissions within our operations, but we have also been able to design improvement plans focused on reducing these emissions, enhancing energy efficiency, and conserving natural resources. This comprehensive understanding extends beyond the general emissions (Scope 1 and 2) to include other significant sources (Scope 3), enabling us to implement more focused and global improvement systems.

Encouraging Other Industries

We strongly encourage other industries to undertake carbon footprint calculations. It is not only a matter of social responsibility but also a means to achieve industrial and energy efficiency. While the initial calculation can be challenging due to data collection and emission factor identification, the benefits far outweigh the efforts. Quantifying and measuring emissions allow organizations to define sustainable development strategies and make substantial contributions to combating climate change.
