Embracing Open Innovation

In the dynamic bakery and pastry industry, open innovation is crucial for developing new ingredients, techniques, and sustainable practices. At Pastisart, we exemplify this trend through our collaboration with Agrosingularity, a startup focused on upcycling food ingredients. By incorporating dietary fibers and natural flavors from Agrosingularity into our whipped dough formulations (including products like plum cakes and muffins), we not only enhance product quality but also reduce our carbon footprint.

Our commitment to open innovation extends to our membership in Indpuls, a hub founded in 2022 that brings together ten Catalan companies to foster innovation across the sector.

New Product Launches

We are thrilled to introduce several exciting new products to the market in 2024, focusing on convenience and taste without compromising nutrition. Our “on the go” and “ready to eat” offerings cater to the growing demand for quick yet wholesome food options.

In the savory pastry segment, we are launching “sneckens” — cheese-filled pastries available in pizza and barbecue flavors. For those with a sweet tooth, a new range of muffins with diverse fillings such as pistachio, dulce de leche, white chocolate, and salted caramel is set to impress. Additionally, new products inspired by angel cake, castella, and chiffon cake textures are in the pipeline.

Among our most innovative offerings is a high-protein croissant, rich in natural fibers and low in sugars, alongside a new pistachio cream-filled croissant, tapping into the latest flavor trends.

Strategic Market Positioning

Our goal is to lead the national whipped dough products market. As our CEO, Núria Betriu, states, “We are investing heavily in enhancing the quality of our whipped dough products, prioritizing ingredient quality and leveraging the latest technology to maintain product freshness and fluffiness without artificial preservatives.”

Financial Growth and Sustainability

In 2023, we produced 36,040 tons of product and achieved a revenue of €107.4 million, marking a 4% increase from the previous year. We reported an EBITDA of €6 million and net profits exceeding €2 million. This growth is attributed to our investments in digitalization, AI for quality control, sustainability through solar panel installations, and automation.

Looking ahead, we plan to install a new fermentation line at our Roda de Berá plant in Tarragona. Despite concerns over rising cocoa prices, we are optimistic about a 5% growth in 2024, supported by our strengthened R&D and export teams, with a particular focus on markets in Italy, France, and the United States.

Introducing Our New Line of “Ready to Eat” Muffins with Innovative Fillings and Toppings

At Pastisart, we are thrilled to announce the launch of our new line of “Ready to Eat” muffins, now available for the American market. These 120-gram muffins come with a variety of exciting fillings such as pistachio, dulce de leche, white chocolate, salted caramel, speculoos cookie, and a special guava muffin topped with cheese, specifically tailored for our American consumers.

This new collection of flavors aligns with our strategic positioning in the whipped dough segment, where we aim to become a national leader. Currently, we offer a wide range of muffins in 60-gram and 110-gram sizes. With this new 120-gram line, designed to resemble the American “muffin” style, we are expanding our flavor and size variety to cater to the North American market.

“We prioritize flavor above all. We want our consumers to enjoy our products, providing them with a unique gastronomic experience that surprises and delights them,” says Núria Betriu, CEO of Pastisart. “We are heavily investing in enhancing the quality of our whipped doughs, prioritizing high-quality ingredients, and applying the latest technology to maintain the fluffiness and freshness of our products without using any artificial preservatives,” Betriu explains.

With two manufacturing plants, one in Roda de Berà (Tarragona) and another in El Espinar (Segovia), we have an annual production capacity of over 55,000 tons. “We have the assets and capabilities to become leaders in the whipped dough segment,” confirms Betriu, emphasizing that “our clients increasingly prioritize product quality and the uniqueness of service.”

We are embracing the pistachio trend with a new croissant filled with a smooth and warm pistachio cream. The product comes pre-fermented, egg-washed, and decorated with colorful toasted pistachio pieces, providing a delightful texture contrast.

We’re also thrilled to introduce a new addition to our “Ready to Eat” muffins lineup: the guava muffin with cheese topping. Being familiar with our company and business, Cecot Energia provided tailored guidance that was essential for this complex project. Their use of the internationally recognized ISO 14064 standard ensured the reliability of our carbon calculations, validated by an independent accredited company (APPLUS).

The Benefits of Carbon Footprint Calculation

The insights gained from this study have been invaluable. Not only have we identified the major sources of emissions within our operations, but we have also been able to design improvement plans focused on reducing these emissions, enhancing energy efficiency, and conserving natural resources. This comprehensive understanding extends beyond the general emissions (Scope 1 and 2) to include other significant sources (Scope 3), enabling us to implement more focused and global improvement systems.

While the initial calculation can be challenging due to data collection and emission factor identification, the benefits far outweigh the efforts.
